Observations

The Soleras of our VORS (Very Old Rare Sherries) were established towards the end of the 19th Century. Each individually registered bottle of the "Valdespino V.O.R.S. Collection" represents over 100 years of careful selection by generations of expert oenologists. The result is a Sherry unique in character, intensity and complexity. Coliseo is extremely rare as it comes from a solera of only 5 butts. Though the wine is guaranteed by the Sherry Council to have an average age of over thirty years (VORS), it in fact has an average age of over 60 years which gives it its incredible complexity and intensity. It has a light mahogany colour with copper and green tones, while on the nose it is intense with mineral, saline and nutty, waxy notes and a spicy background. On the palate it is bone dry, intense, with tangy balsamic notes and traces of oak and has amazing length. Truly something special.
